Citron vert Guadeloupe

The Guadeloupe lime, also called lime or limette, is a small fruit of a very bright, deep green, smooth and round like a little ball 5 centimeters in diameter. Its flesh is also green and it is much juicier than that of the yellow lemon. It is the fruit of a citrus tree of the Rutaceae family: the lime tree or Citrus aurantifolia in its scientific name.

The lime tree is not an indigenous plant. It was the Spanish conquistadors who introduced it to the Antilles in the 16th century. Indeed, its fruit was used on ships as a preventive treatment for scurvy. The shrub had previously been discovered in India or Malaysia by the Crusaders, who had spread it, during their journey, throughout the Mediterranean rim.

The lime is, in fact, effective against scurvy, which is due to a vitamin C deficiency. It contains 52 milligrams per 100 grams. The juice of one lime corresponds, in short, to a third of an individual's daily vitamin C needs. In addition, it contains calcium, potassium, iron and vitamin A. It is good for the bones, reduces fatigue and eliminates toxins. Note that as soon as it is cut open it begins to lose its vitamins.

In Guadeloupe, lime is used for cocktails, the best known being the Ti-punch, where it accompanies one volume of cane syrup to two volumes of white rum. Or the Planteur, which also contains angostura, nutmeg and guava or orange juice. But it is also found in punch-coco, punch-gingembre, punch-maracudja and others.

Lime is also used in cooking. It is sprinkled over the flesh of fruits that oxidation would blacken, such as avocado in the preparation of féroce. It is added to marinades. It is an ingredient in sauce-chien. The acid it contains is enough to cook the flesh or simply tenderize it before cooking, whether that of crab for a matoutou or that of fish for a blaff. It is also added to poulet boucané, colombo, carry… Finally, it flavors desserts such as sorbets, cahudeau or tourments-d'amour.

To know, when choosing it, that a juicy Guadeloupe lime will be firm and heavy. It is better that it is not treated so that its zest can be used. It keeps for one week at room temperature, two weeks or even one month in the refrigerator.
